I’ve been experimenting in the kitchen lately, trying to find creative ways to incorporate some more nutritious wild foods into my meals.  And since the dandelion flowers have been popping for a few weeks now (and many of them are already starting to go to seed!) I figured I’d seize the opportunity to add these vitamin-packed abundant blossoms into a healthy snack.  I live an active lifestyle, so it’s important that I have access to easy, convenient and nutrient-dense foods that I can eat on-the-go.  Enter: dandelion protein muffins!  This recipe is full of nourishing vitamins and minerals including Vitamins A , C, E, and B’s,  potassium, calcium, magnesium, iron, and of course, protein!

Ingredients:

1 1/2 cups dandelion petals, loosely packed

1 cup protein powder (I use organic Vanilla pea-based protein from Tone It Up)

1 cup flour 

2 teaspoons baking powder

1/2 teaspoon salt

1/4 cup coconut oil

1/4-1/2 cup raw honey

1 egg, beaten

1 1/2 cups milk (I use almond or coconut)

1 teaspoon vanilla extract

Instructions:

Step 1-  Harvest the dandelion flowers in a pesticide-free area, away from roadsides, when the blooms are wide open on a sunny day.  Do your best to separate the petals from the green parts.  One way to do this as easily and quickly as possible is to hold the top of a dandelion flower with the thumb and pointer finger of your left hand while you pinch very hard right above the bract of the flower with the fingers of your right hand, releasing the petals into a bowl or measuring cup.  If a bit of green snuck in there, it’s no big deal, as the honey will balance out any bitterness.

Step 2- Combine all of the ‘dry’ ingredients, including dandelion petals, in large bowl. 

Step 3-  In a separate bowl, mix together the ‘wet’ ingredients: milk, honey, oil, and egg.

Step 4-  Add wet ingredients to dry mix.  Stir well to combine.

Step 5-  Pour mixture into greased muffin tin and bake at 400 degrees Fahrenheit for 7-10 mins, or until a toothpick inserted in the center comes out clean.
