I’ve been experimenting in the kitchen lately, trying to find creative ways to incorporate some more nutritious wild foods into my meals. And since the dandelion flowers have been popping for a few weeks now (and many of them are already starting to go to seed!) I figured I’d seize the opportunity to add these vitamin-packed abundant blossoms into a healthy snack. I live an active lifestyle, so it’s important that I have access to easy, convenient and nutrient-dense foods that I can eat on-the-go. Enter: dandelion protein muffins!
